Back pain plagued her.  It radiated down her leg.  She was unable to work.  Housecleaning was impossible. She had a herniated disc. Finally the doctor advised surgery.  Except that she had been in limbo for a year.  With all that pain, she subsisted on pain killers that put her to sleep day and night.  Unfortunately pain killers can lead to constipation. But I’ve got good news!  You can eat your dessert and have it too.  Try these Grain-free Cilantro Lime Dessert Bars. They can keep that constipation at bay!

Constipation can be miserable. If not treated, several complications can develop.  These can include swollen anal veins, and torn anal skin.  Fecal impaction and intestine can protrude from the anus. But let’s skip all that and enjoy these delectable Grain-free Cilantro Lime Dessert Bars.

Cilantro has some amazing health benefits.  I always thought it was spicy, but not so much in these amazing bars.  Coupled with lime, it just gives a delightful burst of flavor.  I was inspired by this recipe.

Heat oven to 350 degrees and grease a 9 x 9 square pan.  Beat butter and sugar on high speed until fluffy.

Mix in flours and salt until combined.  It will look very floury, but the butter will melt, making a very nice crust. Arrange with fingers on bottom of pan.

Bake about 25 minutes until edges are golden.

Turn your oven light on, and keep on eye on the crust while making the top layer.  Using high speed on your mixer, beat egg yolks and lime zest for five minutes.  Using a low speed, slowly pour in the sweetened condensed milk.  Beat on high for three minutes.  Fold in the lime juice and cilantro.

Remove baked crust from the oven, and pour lime layer on top. Bake for ten minutes or until set.

Cool to room temperature, then chill at least four hours.  Slice into squares.

Grain-free Cilantro Lime Dessert Bars

2 sticks butter, room temperature

1/2 c. powdered sugar

1 c. almond flour

1/2 c. + 2 1/2 T. tapioca flour

1/4 c. + 1 T. coconut flour

pinch of salt

3 large egg yolks

1 1/2 t. lime zest

2/3 c. fresh lime juice

handful fresh cilantro, chopped

14 oz. can sweetened condensed milk
