Germs are everywhere.  Even if you keep an immaculate house, they are still there, as they travel through the air.  And then, if you leave the house to go shopping or to a doctor’s appointment, you are sure to encounter some.  Well, how about “eat healthy, live longer?”  I will help you do that with Grain-free Lemon Thyme Bread.

With the abundance of germs every place you go,  and in the air you breathe, its nearly impossible to avoid them.  And then there are the hospital germs.  I am a nurse, and know how scary those germs can be.  Sometimes, even the antibiotics can’t fight them. And the more germs we encounter, the harder our immune system has to work to fight them.  So let’s give it a kick start with this Grain-free Lemon Thyme Bread.

I love to bake with fresh herbs, and the burst of lemon from the zest is just amazing! I got my inspiration from this recipe. Let’s get started.

Preheat oven to 350 degrees. Prepare your pan.  I used a 8×4 loaf pan that I lined with parchment paper. It’s so easy to get the baked loaf out.  I greased the bottom just enough to hold the paper in place, then the paper and sides of the pan.

Using a hand mixer, beat butter and sugar until fluffy.  Add in egg.

Using a whisk, beat buttermilk and sour cream together.

Using two forks, toss the flours together.  This is very important in grain-free, gluten-free baking.

Then add thyme, lemon zest, baking soda, and salt.  Beat into butter/sugar/egg mixture, alternating with buttermilk/sour cream mixture.

Pour into pan.  Use spatula to smooth top.

Bake for about 40 minutes until toothpick comes out clean.  Remove from oven and cool in pan for ten minutes.  Run a butter knife along edges, then transfer to wire rack to finish cooling.

Grain-free Lemon Thyme Bread

1/2 c. butter, softened

3/4 c. sugar

1 egg

1/2 c. buttermilk

1/2 c. sour cream

3/4 c. +1 T. almond flour

1/2 c. + 1 T. tapioca flour

1/4 c. +1/2 T. coconut flour

2 T. minced thyme

1 T. lemon zest

1/2 t. baking soda

1/4 t. salt

Lemons have some amazing health benefits.  Which is why you should include them in your diet. Thyme is also incredibly good for you.  Remember, “eat healthy, live longer!”
