While chocolate is wonderful, sometimes there is just too much. Chocolate cake and chocolate ice cream.  Dark Chocolate.  I am definitely a milk chocolate girl.  And I like things with flecks of chocolate like Black Cherry Chocolate Chip Ice Cream.  Things with chocolate chips in them are perfect if you are like me.  As are Grain-free Orange Chocolate Chip Muffins.

Those citrus muffins dotted with chocolate chips beckoned me, and my mouth started to water.  I peered through the bakery window on my morning break and realized I hadn’t had breakfast.  Maybe I could grab one real quick so I could make it to lunch.  As I pulled the door open, the warm air jolted my thoughts back to reality.  I remembered that my taste buds liked this type of muffin, my body didn’t like it quite so much.  In a few days, my misery would make me wish I hadn’t enjoyed eating the muffin.  But then it came to me that I could stir up the very same at home — this time grain-free.

These are great for the citrus lover with just a hint of chocolate.  If you are new around here, muffins are my favorite, as you can see by my Grain-free Carrot Sage Muffins, and my Grain-free Lemon Basil Poppyseed Muffins.  This recipe uses both the zest and orange juice, all the amazing benefits of which can be found here. Preheat oven to 400 degrees.  Grease muffin pan.

Toss your flours together.  This is very important in grain-free, gluten free baking.  I just used a couple of forks.

Add the sugar, baking powder, soda, and salt.  Using a fork, combine butter chunks until coarse crumbs result.  Mix in chocolate chips and zest.

dry-ingredients-grain-free-orange-chocolate-chip-muffinsMix milk, 1/4 cup orange juice and egg.  I just used my nifty little whisk.  You could use a hand mixer, but I just think its easier on clean up to use a whisk. wet-ingredients-grain-free-orange-chocolate-chip-muffinsJust barely combine wet and dry ingredients.  By the time muffins get transferred the a baking pan, batter is thoroughly mixed.

Fill cups about 2/3 full.  Bake about 15 minutes.  Cool in pan for 5 minutes.  While muffins are cooling, stir up the glaze.

Mix the powdered sugar and 1 tablespoon orange juice.  Pour over still warm muffins.

Grain-free Orange Chocolate Chip Muffins

1 c. almond flour

1/2 c. + 2.5 T. tapioca flour

1/4 c. + 1 T. coconut flour

2/3 c. sugar

2 t. baking powder

1/2 t. soda

1/2 t. salt

1/2 c. butter, cut into chunks

1/2 c. chocolate chips

1 t. orange zest

1/2 c. milk

1/4 c. orange juice

1 egg, slightly beaten

Glaze

1/2 c. powdered sugar

1 T. orange juice
