Grain-free Pumpkin Brownies

A blend of pumpkin and chocolate wafts through the air.  Is there anything better than pumpkin and chocolate?  A mental image of the fudgy brownies complete with cinnamon and nutmeg to flavor the pumpkin, just waiting for a bite, appears.  Oh, wait…I forgot that brownies make me sick.  Maybe you have guests coming for the holidays with gluten intolerance.  Shoot for some brownie points with these amazing Grain-free Pumpkin Brownies.

Brownies are hard to resist any day, but Pumpkin Brownies?  You have got to be kidding. Indulgence just this once may be fine, or maybe not.  Symptoms of various types may appear in a few days, and who wants those with guests?  Don’t worry, I’ve got you covered with this delectable grain-free melt-in-your-mouth chocolate goodness.

To put a fall spin on these brownies I married a couple of recipes. This recipe is my all-time favorite.  And since everyone is just crazy about pumpkin everything this time of year, I incorporated this recipe as well.

Over low heat, slowly melt butter and chocolate until smooth. I stirred it occasionally with a wooden spoon.  Remove from heat.

Toss flours together with two forks.  This is very important in grain-free, gluten-free baking and allows air in the flours.

Add in spices and salt, and mix until combined. Set aside.

Pour melted chocolate into mixing bowl.  Beat in eggs, sugar, and vanilla.

Fold in pumpkin.  I just used a spatula.  Then add flour mixture and combine.

Prepare 8 x 8 baking pan with parchment paper and cooking spray. I sprayed the pan before I put the paper in.  I found it helps it stay in place better.

Using the spatula, pour in batter and smooth evenly.

batter-pan-grain-free-pumpkin-browniesBake at 325 degrees for about 40 minutes.  Cool completely, then cut into squares using a warm knife.  Chill.

Grain-free Pumpkin Brownies

1 stick butter

2 squares unsweetened chocolate

1 c. sugar

2 eggs

1/2 t. vanilla

1 1/4 c. pumpkin puree

2 T. almond flour

1 T. tapioca flour

1/2 T. coconut flour

1 t. cinnamon

1/4 t. nutmeg

1/4 t. salt
