Fall is coming on and all the kids are back in school.  There is nothing that makes Mom happier than well-rested children.  The good news is pumpkin promotes sleep, and its a great fall flavor. But too much pumpkin pie at dinner may rile the kids up, giving no rest to weary Mom.  But what about a savory Grain-free Pumpkin Sage Pizza? After all, happiness is a slice of pizza!

Sleep-deprived children can exhibit a number of behaviors directly related to the cause.  They may struggle paying attention in school. They may be more impulsive in speech and action.  And they will have less problem-solving skills.  Not to mention, grumpy and whiny. Put the kids to bed already!  Most kids like pizza, so paired with pumpkin that promotes sleep, we now have a win-win situation.

It has a thin crust, so its perfect for the kids that aren’t really crust people.  However, it beats the alternative of none.  Those of you who are grain-free will know what I am talking about when the flip side is sauce and cheese.  It gets old fast!  With a pumpkin sauce, blended with the flavor of the gouda cheese, topped with fried sage leaves, you can welcome fall in style.  In addition, sage boosts the memory, so sleep and tests are covered!

Let’s get started.  I got my inspiration from this recipe. Begin with the yeast sponge.  I put my hot water in a bowl, then sprinkled the yeast on it.  I fed it the sugar, then set it aside for 5 min.

Toss the flours together in a separate bowl.  This is very important in grain-free, gluten baking.  It allows air into the flour.

Combine salt and flour.  I like to use a wire whisk.  Add yeast sponge.  Then combine with oil. Knead in bowl for five minutes.

Cover with a clean kitchen towel.  Heat oven to 500 degrees, and place bowl in a warm place. Let rest for 1 hour. I just placed it on my stove top, which is over my oven.

Using a small sauce pan, heat about 1 inch of oil.  Toss in fresh sage leaves, about two at a time, for 30 seconds.  Remove and place on paper towel.  Set aside until pizza is baked.

Arrange dough on pizza pan and roll to fit edges.  I used parchment paper to keep it from sticking. Prick with a fork to keep it from puffing up.

Mix pumpkin with nutmeg and salt if desired.  Using a spatula, spread on pizza dough. Sprinkle with cheese.

Bake about ten minutes, then arrange sage leaves as desired.

2 1/4 t. rapid rise yeast

1 c. warm water

pinch of sugar

1 3/4 c. almond flour

1 c. + 2 1/2 T. tapioca flour

1/2 c. + 1 T. coconut flour

1 t. salt

1 T. oil

oil for frying sage leaves

8 fresh sage leaves

2 c. pumpkin puree

1/2 t. nutmeg

salt to taste

4 c. shredded Gouda cheese
