While I love my fruits and vegetables, I have a sweet tooth.  It’s great for some kinds of ice cream, and sometimes pudding.  But usually I am just out of luck.  And then there’s cheesecake.  Did someone say cheesecake?  Why not indulge in this Grain-free Strawberry Delight?

Cheesecake is one of my favorites.  While I am sure I am not one of them, some have their favorites, because someone invented the cheesecake party wheel to cater to everyone.  There is chocolate caramel nut, triple chocolate, raspberry, and strawberry.  I would be the one having a piece of each!  If I am desperate enough, I scrape the filling and have that.  This decadent Grain-free Strawberry delight features a cheesecake layer, which is good enough for me!

I got my inspiration from another amazing blogger at Southern Bite. It’s May, after all, and strawberry season.  What better way to give it tribute!  Ready for kickoff?

Trim the tops off the strawberries. Slice, and combine with sugar and lemon juice.  Chill.

Heat oven to 350 degrees and grease a 9×13 baking dish.

Toss flours with couple of forks. This is very important in gluten-free, grain-free baking, as it allows air in.

Stir in brown sugar, then combine with butter.  Arrange with fingers in bottom of baking dish.

Bake about ten minutes.  Cool thoroughly.

Beat cream cheese, powdered sugar, and 1 container of whipped topping until smooth.  I just used a hand mixer.

Smooth evenly over crust.

Strain strawberries.  Using slotted spoon, lay strawberries over cream cheese layer.

Spread whipped topping over strawberry layer.  Chill at least 2 hours.

1 c. + 2 T. almond flour

1/2 c. tapioca flour

1/4 c. coconut flour

3/4 c. packed brown sugar

1/2 c. butter

1 (8 oz.) package cream cheese, softened

1 c. powdered sugar

2 (8 0z.) containers frozen whipped topping, thawed
