A holiday calls for some special traditions. Special activities, special clothes, special foods. Oftentimes, I look over the holiday spread and realize I can’t eat most of it.  And I feel sad that I can’t participate with the rest.  It’s not fun to feel left out.  But then I remember the quote: “Don’t let circumstances change you.”  And get busy in the kitchen.  Here’s Grain-free Strawberry Dessert Pizza just for you.

While feeling left out is tough, I could just indulge.  That would fix the problem for the moment. But then in 3-4 days I would pay for it.  Abdominal pain, which in turn, makes me grumpy.  For others, it may be diarrhea or bloating.  Maybe its nausea.  But I’ve brought you a beautiful dessert that bypasses all that.  You can eat it just like everyone else and don’t have to worry about being sick in a few days!

If you love brownies with strawberries, this is your recipe!  This is a collaboration of a couple recipes.  The brownie crust and the topping.  I love the brownie crust, with the amazing cream cheese topping, and decorated with strawberries and blueberries.  You just can’t beat that!

Grain-free Strawberry Dessert Pizza

Let’s get started.  Preheat oven to 325 degrees. Spray a pizza pan with cooking spray.

Using low heat, slowly melt butter and chocolate, stirring until smooth and glossy. Remove from heat.

Using a hand mixer, beat in the sugar, eggs, and vanilla.

Then add in the flours and salt.

Pour into pizza pan.  Using a spatula, make sure batter is spread evenly to edges.

Bake 15-16 minutes.  Cool thoroughly.

Crust:

1 stick butter

2 squares unsweetened chocolate

1 c. sugar

2 eggs

1/2 t. vanilla

2 T. almond flour

1 T. tapioca flour

1/2 T. coconut flour

1/4 t. salt

Using a hand mixer, beat in the sugar, eggs, and vanilla.  Then add in the flours and salt.

Pour into pizza pan and bake 15-16 minutes.  Cool thoroughly.

Beat topping ingredients together with hand mixer until smooth and creamy.

Spread over pizza, leaving a 1/2 inch border.

Arrange sliced strawberries and blueberries.  Chill for at least one hour.

Topping:

8 ounces cream cheese, softened

1/3 c. sugar

1/2 t. vanilla

Beat topping ingredients together with hand mixer until smooth and creamy.

Spread over pizza, leaving a 1/2 inch border.

Arrange sliced strawberries and blueberries.  Chill for at least one hour.

    My mouth is watering as I read this. It sounds so delicious. I absolutely must try this. The only other dessert pizza that I’ve had is the one made on a sugar cookie crust.
