P. S. Parsley


Parsley is one of those garnishes used on your plate in a restaurant.  And you generally just toss it to the side, right?  Well, it may be the healthiest thing on your plate.  It’s little, but so powerful.  So think twice before blindly flinging.

It is full of vitamins and minerals, but I will stop there before this starts to sound like a nutrition class.  I took nutrition twice, not because I failed either one of those times.  But it was supposed to be an easy nursing core class, and it was thought I could get an A the second time and raise my GPA.  No such luck.  I just couldn’t remember what all had vitamin A and C and so forth.  So let’s just say its really good for you!

Parsley was used medicinally in historic times before we started using it as a food.  Though I think that it is most commonly a decoration.  Charlemagne grew it in his many gardens just like the lemon balm.  His gardens must have smelled just amazing!

See how good it is for you?  That humble little decoration on your plate!  Will the other food on that plate do all those things?  Just 5 sprigs will give you all the vitamin K you need in a day!

There are several types of the parsley.  One is the curly parsley which is the one I am the most familiar with.  And then there is the flat leaf parsley.  This one is more fragrant and less bitter.  It is known as the Italian Parsley.

Some Cautions

Parsley should be used in moderation if you are taking a blood thinner.  Large doses are not recommended in pregnancy or lactation.  People with kidney and gallbladder problems should avoid this herb.

Some Final Thoughts

Buy a plant and have plenty of fresh parsley.  Use it for decoration and then don’t forget to eat those little sprigs.  Remember, even the little bites of health count!!

    I did not know all of those health benefits of parsley!! Very interesting about not eating large quantities while pregnant! I grow it from seed every year and try use it in as much as possible!
